Hi,

Is there any way (e.g. on GitHub) to see the actual changes that were made?

you might be also knowing about find updated templates facility at forum admin panel !

I don't think we have templates changes details through GitHub.
you can compare MyBB 1.8.6 theme xml file with MyBB 1.8.7 theme xml file & find the differences
