Some forums on my board make sense to sort ascending while others make more sense to sort descending. Is the a way to make unique sorts for different forums or threads? I'm not afraid to adjust the code if needed to make it work.

you can change that for each forum..
ACP >> Forums & Posts >> Select a forum >> Edit Forum Settings >> Default View Options >> Default Sort Order

Actually I realized that I wanted to change the sort for the replies in a thread. I'm guessing this is beyond the design of mybb but it can't hurt to ask..?
