I was wondering if there is a "latest activity" tutorial or plugin for 1.8 that I can put anyware but presumably in the sidebar. I have tried the Latest Posts in sidebar (1.1), Recent Threads (8.0) and Top Stats (1.0.4) but I don't seem to be able to customize them.

What do you mean by customize them? You're downloading the source code, you can do anything to it that you like.
