So someone on my shared hosting server could potentially hack my .settings.php file if its left at 777? Not likely to happen, and things are usually backed up.

I doubt it even if it was on 777. They would need the password and username to be able to access everything in your directory.
Most hosts won't allow you to access other people's files anyway.
