How do I upgrade from MyBB Version 1.6.3 to 1.8.9 without losing any of my post?

Back up your files and database, deactivate your plugins (1.6 plugins and themes won't work straight away on 1.8), download 1.8.9, upload the whole package over your current files, then go to yoursite.com/install/upgrade.php and follow the steps.

Also, I hope you stay more up to date from now on - 1.6.3 was released over 5 and a half years ago

Ok. I did that. And now it says this. What do I do now?

Did you delete your config.php file? If not, it sounds like whatever FTP client you're using isn't configured to merge directories, but to replace them entirely... upload the one from your file backup, then continue the upgrade.
