So, I'd like to remove star ratings. Can anyone tell me how that's possible?

Admin -> User & groups -> Groups
Add a 0 at User Stars

If you have also numbers setup in user Titles then also add a 0 there.

Admi CP > Configuration > Forum Display Options > Use Thread Ratings? > No > Save settings.
