I know I can look at guests' IP addresses while they are visiting but is there a way of looking up the addresses of guests who have visited but are no longer viewing? Is this information stored in the database somewhere?

I can't see anywhere that they are stored. You'd have to ask your host for that information.
If MyBB was to log that I imagine the database would rather large.
There's a server log that you normally access in cPanel. It's called "RAW Access Logs"

and is there a plugin which can show a stats page for users? like loads of info about them like browser type and all that?

Google Analytics or
Mint (commercial software) to do visitor tracking on your site.
