I run a football forum (www.footyaddict.co.uk)

Is there any way I can archive certain posts & threads (without losing post count) as the football season has now ended?

Any help would be appreciated

There should be an in-line thread moderation option to move a thread, you need to create a sub-forum with posts that are to be archived. If you like you can disable comments, and just allow users to view these threads. It will not affect your post count, users will be able to view the threads, but not comment.
