can you check latest entries of server error log (at web host panel) to find cause of error 500

have you set gzip compression level at forum admin panel ? if so what is the level ?
if it is above 4 then can you change it to 4 (or 3) and try registration process again ..

exactly which version of MyBB you are using & what is your php version ?
they are displayed at the home page of forum admin panel

I changed the PHP version from 7.0 to 5.6 and it came back to work
