I'm trying to find the template where I can edit the information shown about a user within a thread. For example, in this thread where it shows my username, rep, posts. join date, etc. Which template file is this located in?

It's in de postbit templates section of your theme; look for postbit_author_user, postbit_classic and postbit_user
