How would I go about installing multiple forums on the same host and bringing in my old members from a different MyBB forum I've had?

As in, I have my original forum and create 2 more blank ones but want to bring the members of the original over to the two new ones as well.

How would I go about doing this?

Well I'm not really converting from one to MyBB or merging MyBB forums. I just want to extract the users from my original forum, and add them to my two new additional forums.

They'd still be seperate forums. I just want to create more forums that will focus on one thing but don't want the members to re-register again at any of them.

Yes, thats what I'm saying. You just use the merge system and once you finish the users step you can "stop" converting.
