Hello .. brand new here ..

Is there a plug-in that will send an email to Admin when a new user registers that includes custom fields (by this I mean custom fields added to the user registration) ?

Not that I know of. This requires a custom plugin though, and as such is in the wrong forum. Posting it in the relevant forum may get you what you want.
