I need to find where I can change this colour, as now it's pretty hard to see the difference of what is the post and what is the signature.

Sorry, it doesn't seem to work when I add a color:

Try:
<hr size="1" width="25%" align="left" style="background-color:#999999;color:#999999"/>
{$post['signature']}

You need set both: bg-color and color (first is visible in firefox, second in IE)
