Please can you confirm:

Are you using any plugins? If so, what ones.
Can you run the File Verification tool in the ACP

When you receive one such email, view source and look at header info.
Verify type is text/plain, not text/html.

I'm not sure where this is established (yet).

Emails I receive correctly have this header element.
Content-Type: text/plain; charset=utf-8
