Rather than run a full installation upgrade is there any way I can do  it in increments? i.e. run 1.8.25 changed files then 1.8.26? If so where do I find the 1.8.25 files?

First just turn off your board. (Don't need to stop all the plugins). Then just copy the upgraded files of 25.. Once you see that your forum is upgraded to 25 then you can think of 26 (which will need for you to stop all the plugins btw).. It's the simplest way..
