I really DID look for this and can't find it anywhere - I want to edit the email that is sent to folks who have registered (we want to tell them some specific things).  Can someone point me in the right direction?

If you are speaking about the mail body user gets upon registration then those are located in messages language file.
There are 3, based on the scenarios of settings: email_activateaccount, email_activateaccount1 & email_activateaccount2.

Access those going ACP > Languages (left menu item) > Options button (at right) corresponding to your preferred language > Edit Language Variables > scroll and search for messages.lang.php and click the "Edit" link at the right of it.

Then scroll down and search for the text value of those 3 strings mentioned above.
