(Thanks to help from Matt and others I have finally gotten my theme working again after upgrade mistakes.)

Is there a problem if I force the GOOD Default theme on all users - and delete the BAD Old themes?
I plan to add more theme variations in the future - then, will users be able to select the new themes?

on Options Click on "Force on Users"

There won't be any issues no, as long as the theme you're forcing works fine then is no harm in doing it.
