Is there an option for this within MyBB? Or an Add-on?

It’s very unlikely this will be possible to achieve, it won’t be easy to prevent the code running to rebuild the last post data.

Bump Absorber does this on a per-forum basis, so if you're able to place your specific threads into a specific forum, and set the bump interval to a huge value so not even the thread's author can bump the thread, then that might solve your problem.

or you can use Bump Thread Plugin
Please tell me, how would this plugin help me prevent new posts from bumping a thread?
