How could one modify or make a new plugin to disable for example (Last modified: 2 minutes ago by admin) when an admin edited another user's post and corrected a spelling error for example.

I think this plugin could serve for it.

I’m pet sure what you want to do is a base setting.

Admin -> configuration -> settings -> board settings -> posting

Scroll down about half way; “ Show 'edited by' Message for Administrators and Moderators
Do you want to show edited by messages for posts created by administrators and moderators?”

Select no. Save.
