You can turn off the editing of custom fields in certain groups which is great. However, they appear in user profile when admin edits it, especially the select list as you can't leave it empty! Then its impossible to get rid of again!

I've personally always added a blank line in those at the top before adding options, or even a ---. Then its blank or unfilled.
