Hello! I am struggling to find where I can set the "posted by (username)" colour as it is defaulting to white and not the colour of the users group and profile?

Where do you see this string?
Are you using a custom theme?
You can try the web developer tools of your browser (tools can be opened with F12 in most browsers) and see the CSS and definitions - so you can figure out the class for this text/element or parent elements.
