I just installed my new MyBB website. I noticed that there is a UTF-8 conversion tool in the System Health section. Should I convert them all or just leave it alone. I'm running the latest MyBB version. Is it still a necessary step to do after installing the forum script?

If your forum is new, you probably don't need to run the converter.
It's intented to convert "old" forum from utf8 to utf8-mb4. New installations are utf8-mb4

I suggest make sure your database Collation also is utf8mb4_general_ci
