it would be great if someone could make a plugin where it shows your race (ex. elf, dwarf, etc....) and profession (ex. mage, warrior, necromancer, etc...)

You can do this yourself without a plugin. Create "custom profile fields" in admincp. If you want to display them in postbit view the wiki for custom profile fields which I believe explains how to do that. Take a few minutes top.
edit: nvm the wiki...it doesn't tell you how to do this...search the forums for "custom profile postbit".
