Hello all,
I just installed 1.2.11 fresh, and the default skin stretches on my 22" Widescreen monitor.

Could someone tell me what I can do to size the theme down to about 800 to 1000 pixels in width like many custom themes have done?

Hi,

To make these changes you need to set a fixed width on the "Page Container" section of the theme editor.

An example would be setting the width to 760px (would fit in 800x600 resolutions)
