To remove it, please do the following:
Admin CP > Users and Groups > Custom Profile Fields > beside the "Sex" section, click "Go" > Next, find the "Selectable Options" text box, find and remove "Other" from it and click "Edit Profile Field".

Sex refers to what set of genitalia one has; gender is one's sexual identity.
I have options for male, female, and not specified. Should a member of my forum approach me, I may add more options.
I personally wouldn't want to know if any of my members feel they are anything other than male or female, so those are the only choices they are given.

Well that is up to the forum administrator. We put it in the custom profile field so that the selections can be easily changed.
