Is there a way for me to manually approve users that sign up rather than them getting an activation email?

I can't find the option (if there is one) to do this anywhere in the admin section, thought it would be in the "Registration Method"

No such option currently exists. I have added this to my mods list. I will get it done when myBB Gold comes out (if it isn't included by default).

This is one possible solution:
1) Create a new usergroup called "Approved Members" with normal permissions)
2) Edit the default "Registered" usergroup so that the members cannot view/post/do anything.
3) Search for users in the "Registered" usergroup and change their usergroup to "Approved Members"
