i am about to secure my first monthly advertiser that isn't paying through google adsense (though i do run adsense ads). i'm going to be offering them an introductory rate (read: discounted) for the first month so they can see how well their ads do. is there any way for me to track how many clickthroughs occur?
what other methods have people used to prove their ad-worthiness?

But you may want to include daily unique visitors and total visits. If its going to be a rotation tell them what percentage they will show up.

i think according to google analytics i get about 100 unique visitors per day with about 150-250 visits per day. would you say thats worth more or less than $5/month for an ad spot on every page next to my forum logo?

Well that depends is your site geared to the area of the company that is buying the ad? If so I would say a little more if not $5 would be good. But I'm not experienced in this to be honest.
