Everytime I try to edit a user's profile via the ACP, it gives me this error:

The following errors were encountered:

* The language you selected does not exist. Please select an existing language.


So basically, unless I change their language from 'Default' to 'English', I cannot edit their profile...

This is a known bug, all you have to do is select a language like you said.
