Where can I change the table color from the regular vb blue to a NY KNICKS blue?

What part are you trying to change? Table header? Table Sub Headers?

Anyways, under Themes->Modify/Delete -> Select theme you are changing... you'll find where you can change any colors or images associated with the table header, sub header, etc.
