I was wondering if there is a way where I can have them link to a list of members within each group...something like how the member list is but only when someone like clicks Admins, it'll only have the list of admins on there

Not really, as there isn't a default way of being able to search for users in a specific usergroup. You can modify search quite easily through the source code though, if you want to start custom editing your MyBB.
