Just practice and learn from the default and other people's themes. Just make sure not to copy them though

Thanks, another question, do you use some program or do you just 'know' what colors go well together?

I usually just use the trial/error method with Photoshop. It's not a very good method however.

I recommend using Adobe Kuler. They've got some great schemes there.
