HxD, while being a hex editor, is pretty nice. I can use it to manually edit my 90GB hard disk (finding and fixing a lost partition by manually tweaking the fields in the MBR FTW!) so it can handle large files pretty well. IIRC there's an ASCII search/replace so it should work for that too. Also, it's free.
The only problem is that it is still a hex editor, and so has a UI layout most useful to a hex editor.

I am using it year ago, to manually dump my 2 GB SQL..
Do be aware that if you split a file, it could potentially split what you're looking for in half.
