How can I prevent "Time Spent Online:" from showing in user profiles?

I would also like to have "allow other users to email me" off by default in the registration process.

You can remove the Time Spent Online from the member template. You would just need to find and remove
<tr>
<td class="trow2"><strong>{$lang->timeonline}</strong></td>
<td class="trow2">{$timeonline}</td>
