How do you "hide" the forum so that no one can post in a forum so it serves as a subforum holder, much like the theme area here? I've tried the hide function in the forum management, but it makes the forum completely disappear; not really what I had in mind. I also tried the other one and that just marks it as locked.
I think you can use the permission mod for guest or whatever...
if you want a forum to only contain subforums but no posts, you make it a category, not a forum

Yep, you put a category in a category, and then the forum where you want the threads into the second category.
