I have that plugin on our forum.

However, is there a way to make it where only admin/mod can view it and possibly the person who's profile it's on? Or is that not an option?

You could use the admin hijack plugin.

But when we leave "user notes" on their profiles, the users can see what we write. How do we keep that to only mod/admin seeing what we write?

I have tried this plugin. My regular members can't see the Admin Note. Only Admin and mod can see the note.
