1st: Choosing to display your posts in the classic vertical layout does nothing, it's still the horizontal one.
2nd: Why in the screenshots for downloading MyBB, the editor is the one you see here, but it doesn't look half as nice when you install it?
1st: Are you wanting to change it via the Admin CP or the User CP?
2nd: You have to change what editor the theme uses via the Templates & Style tab in the Admin CP. Select your theme and scroll down until you see "Editor Style"

It doesn't change when you do it in the ACP because that only selects what guests and new suers use, doesn't change current members at all.
