Anyone know why I suddenly can't edit templates anymore for my theme? It was working fine last time I tried to do it, but Now I want to edit the postbit template and the text is all greyed out inside the textbox.

That'll be your browser not liking Codepress.

Go to the ACP home, and on the left side, go to preferences. Turn off Codepress, and you'll be good to go.
