Is it possible to make the forum member only? A type where the first page is a login/register page with a custom message asking them to register for free or login etc...

You can untick the "Can view board" setting for the guest usergroup, which would result in guests seeing the standard no permission page prompting them to login or register when viewing your board.

Don't want to sound like a pain but could you tell me where i could find the template for that login/register page so i can add additional information please?
Your Theme Templates --> Member Templates
You can set Custom Profile Fields under Configuration in admincp if you want additional fields.
Oh missed that part :p
ACP --> Configuration --> Custom Profile Fields --> Add
Make sure that editable by user is set to 'yes'.
