I installed my forum at jordanmeeter.com/forums/ and I'm considering changing the directory name to /ufcforums/. Is this a difficult task? Should I just reinstall the forum?

1. Change the name of the folder
2. Change the Board-URL (General Options)
3. Change the Cookie-Domain if necessary (General Options)
4. Change Cookie Path (General Options)

I probably shouldn't change the actual dir name first, because then I won't be able to access the forum, right?

No~ even if your imagin was true you can correct urls manually when changed.
dont wory! if your forums go down you can undo your rename.

It should work either way - the Admin CP will still be accessible as it does not rely on specific addresses.
So you can either edit the board URL and cookie settings first, or rename the directory first - just make sure you are changing the settings!
