I'm trying to make my own theme however I would like to know how to change my new theme so when I change the templates it doesn't change all the other themes on the Forum. Hope that makes sense

Go to ACP --> Templates and Style --> Templates (Sidebar) --> Add Set (name it what you want) --> Goto your theme settings and change the template set to the newly created one.

Then your new theme will work off that new template set

I've done that but it still changes the other theme templates for the other theme.

Until a fix is provided yes.
