How can I make a user group that when users register they are automatically placed into it? I don't want the users in the group to unsubscribe unless a staff member moves them into a different group.

It'd probably be easiest to edit the settings of the default Registered group, and then create a new group that they will be moved to if they need to be.

How can I tell which was the default registered members group? I've already renamed them, reordered them, and added what powers users of that group will have.

The default has a gid of 2, this is what members automatically go to after registering; you can find the gid at the end of the URL when you edit a usergroup.
