Hello. So my forum is thinking about changing hosts/url, but we don't want to lose all of the data in the posts we've made on the forums.

I made a backup of the forums' tables in the admin CP, but I'm wondering if that saves posts/threads, as well?

Also, when I install mybb on the new url, how do I upload the backed up tables so that they'll work on the new forums?

Yes, it saves everything in the database, which is where threads/posts/etc is. Once you've installed you'd need to go into phpMyAdmin, drop the tables that are currently there, as they'll be there from the installer, and import your backup with the tab at the top. You should also transfer your files so you keep your plugins/themes/etc too.
