It's a simple edit in the jscripts/editor_themes/THEME/stylesheet.css file

Add
color: #000000;

To the dropdown menu. Problem is I don't remember off the top of my head which *exact* property it is and I'm doing a bunch of things at once.

Yesterday I spent ages trawling through the stylesheet in jscripts but couldn't find anything.
