Should be relatively simple questions...

What fonts can be used? Just all true-type fonts, or are there specific restrictions? Similarly, does anything special have to be done (beyond uploading them) to use them?

You just have to upload them. Whether they'll work or not, you'll have to try and find out.

If you upload a new font it's best to test it by moving all other fonts out temporarily and then refreshing a captcha a couple of times until you're satisfied that all characters (lower, upper, numbers) can be displayed with that font.
