I don't know if you noticed this but if you have VIP members or Subscribers then you should have noticed this. But if you go to the mod logs and you have VIP members there actions show up as moderator actions and they show up on the filter list as a mod. Is there a way to get rid of this and possibly create a VIP log section if not then just get rid of VIP in the moderator logs at least?
By default, VIP members or Subscribers aren't in MyBB. If you've added these groups, make sure that they don't have access to the ModCP (similarly, make sure they aren't 'moderating' a forum).
If this is a plugin you've added, it's best to ask the author.

This happens with all users, no matter what group they're in... there's hundreds of people in the list of moderators here. Deleting posts/threads is considered a moderation action, it's logged so you can see when people have deleted something to cover something up etc.
