Is there a way to change the directory that the board is stored in (after installation), and will move the whole board and not just create a new one? Because I accidentally put a directory name that I didn't want. Should I just re-do the installation process?

That's possible. Just download all files from your forums directory and upload them to the new one. Chmod the files and folders like you did when installing. After that you have to login into your Admin-CP and edit the board URL and the cookie settings.
