I really enjoyed reading through PHP in a Nutshell by Paul Hudson, it was great and I learned a lot about serious encryption using mcrypt, socket programming, using PHP to create Flash files and manipulate images, using SimpleXML, advanced OOP, among other things; it really covers everything but I'm just saying what I didn't already know. It also contains a very comprehensive reference.

Also the book covers regexs really well---I have not seen an online tutorial that compares.
