I took some Google Adsense code out of the header via templates, and did the same with the footer.

But, since then I see the forum is fine in Firefox, but 'centered' in IE. I can only assume I've removed some code I shouldn't have.

Can anyone tell me what code I need to put back please?

From the sounds of it you removed: </center>
While there's still another: <center> around.

I made this mistake before, so check the header one, and see if that's the case.

You can re-add a </center> to stop it.

EDIT:

I found this extra piece of code by viewing your site's source:
<div align="center">
This just might be the cause, remove that or add </div> should fix it.
