I don't know of any that support 2-3 cameras but there are a number of free ones from different websites. You can have 2-3 camera support by running multiples streams?

Yeah I was thinking about a hardware switcher or a Video Mixer but those are out of the budget for our school :/ unless we rented.
We have a uStream account, the problem is supporting multiple cameras. Tried livestream too but the cap is 50 and doesn't support multiples at all.

IMO, Ustream Producer is probably the best you're going to find for simple, easy-to-use software. The Pro version ($199 USD) allows unlimited camera inputs.
Alternatively, you could create multiple Ustream/Livestream/etc. accounts for each feed. Not the best solution, but it'd be free.

We're broadcasting the Saskatchewan Provincial Volleyball Tournament Live.
Right now our Plan A is run a composite cable out from the AV outs of the cameras. Our tech guy is coming today to put in composite inputs where we would put the camera feeds into a program and broadcast it from our schools server.
Plan B is to use Macs and use a Video Mixer Software and broadcast it straight to USTREAM using firewire out and convert it into Coax cable.
Plan C is one camera straight to USTREAM.

You should use axis cams, then just use DynDNS to hide the IP's of the cameras

We got it all set up today and it works!!
Basically we have some super computers with awesome video cards in them. A few hundred feet of coax cable with RCA adapters on the end to convert to the video out of the camera.
Then for software we have Microsoft Expressions or something like that and it's being broadcasted straight from our schools server.
