I completely agree with you that each web host should be in it's own environment for many reasons which don't need to be discussed since we're on the same page.
As for the balance, I personally like the idea of having 1 powerful dedicated server running multiple VMs to keep things separated but in this instance I wouldn't because the goal is to separate 3 different web hosts and one problem with all of them being on one server is that there is a single point of failure for all of them so if the server dies all 3 of your income streams goes down with it, not to mention you'd have 3 groups of angry clients instead of one.
In this case I suggest going with different hosting providers for each depending on the usage requirements.
I don't know if you want to publish your usage stats publicly but if you want to PM me I can make some suggestions for each individual web host for you.
